Yum!

This time of year I absolutely go crazy for anything pumpkin; pumpkin soup, pumpkin muffins, pumpkin bread, pumpkin lattes but most of all I love, love, love pumpkin pie! But, at 320 calories per slice (which means 2,560 calories a pie) I hate to admit I could easily go through a whole pie in a weekend. I have found a satisfying alternative, creamy, delicious and oh so yummy Pumpkin Butter… spread on a rice cake. A tablespoon of pumpkin butter only has 30 calories so it’s a 60-calorie slice of salvation.
